Let’s be honest, there isn’t always time for a bake-a-thon… so I often turn to overnight oatmeal to get me moving. Today, I’m sharing one of my very favorite oatmeal recipes: vanilla coconut overnight oats. It’s filled with succulent coconut pieces, creamy sweet vanilla flavor and so many satisfying ingredients. Vegan Pumpkin Overnight Oats – It is overflowing with outstanding fall flavors and is ready in less than 10 minutes! Top it with fresh apples slices and candied rosemary walnuts for good measure!
Salted Caramel Overnight Oats – A balance of sweet and savory deliciousness prepared with peanut butter and a sprinkling of salt. Serve it with a drizzling of caramel sauce on top, and you have a victorious brunch in no time!
Berry Overnight Oats – Add blueberry or strawberry puree for a berrylicious delicacy that your whole family will adore! Top it with vegan whipped cream and more fruit for a dessert-like breakfast delight!
Coconut Overnight Oats Ingredients
Old-fashioned oats – Also known as rolled oats, are flat and flakey and transform buttery and pudding-like when steeped overnight. They are excellent sources of essential vitamins and minerals and are high in fiber and antioxidants.
Coconut cream or full-fat coconut milk – High in healthful lipids, this will make your overnight oats richer and creamier.
Shredded coconut – Not only does it lend a nuttier flavor, it also gives the overnight oats more texture.
Vanilla extract – This delicate, aromatic flavoring combines so well with coconut.
Maple syrup — To lend flavor to your morning cereal! You can use agave or any sweetener of preference.
Plant-based milk — Unsweetened almond, oat, soy, and coconut milk would be excellent for this recipe. If you have sweetened vegan milk in your larder, you can always use that and just omit or reduce the quantity of maple syrup in this recipe.
Salt – Will further enhance the coconut and vanilla flavor without making the mixture briny.

How to Make Vanilla Coconut Overnight Oats
Today’s vanilla coconut overnight oats are made with coconut cream and a few other extremely basic ingredients. It’s one of my favorite overnight cereals with coconut cream because of the luscious texture. As an added benefit, the coconut sugar and coconut flakes really bring out this overnight oats’ coconut cream component.
Grab your canisters
Some people like to make a large mason jar’s worth of overnight oats, while others like to make smaller portions to savor over the course of a few days. Do what you prefer best—it’s your brunch! I personally like to set aside 2-3 of these overnight oatmeal canisters. They’re made of glass, delightfully reusable and securely sealed.
Mix the ingredients
Dust off your beloved mixing basin and add in all of the overnight oats ingredients: coconut cream, oats, chia seeds, milk, vanilla, coconut flakes and coconut sugar. Whisk the ingredients together until there are no more clusters of coconut cream visible. You’ve just made your vanilla coconut overnight oats! How simple was that?
Pour and secure
Now, ladle the coconut overnight oats mixture into your preferred jar(s). You can leave some space for garnishes like fresh fruit, almonds and more to be added later. Seal the canisters.
Store indefinitely
Place your sealed canisters into the frig and store overnight. You can actually savor your overnight cereals a few hours later or delay ‘til the next morning.
